The nutty granola is packed with all kinds of filling, healthful foods. Serve it over yogurt, salads, smoothies.
If you decide to get your granola at a heath food store, make sure the #1 ingredients is Oats, no added hydrogenated oils and no added sugars or artificial ingredients.
Ingredients:

4 cups rolled oats

1/2 cup maple syrup

1/4 cup coconut oil

1 teaspoon vanilla extract

1/4 cup chopped walnuts, unsalted

1/4 cup slivered almonds, unsalted

1/4 cup pumpkin seeds, unsalted

2 tablespoons flax meal

1/2 teaspoon cinnamon

dash of salt
Directions:

Preheat oven to 300°F

Combine all ingredients in a container (make sure the coconut oil is warm)

Spread the mixture into a large baking pan and bake for 30 minutes, stirring every 5-10 minutes, until golden

Allow the oat mixture to cool in the baking pan

Package in airtight glass container to keep it fresh

Watch your granola carefully and make sure to toss it often so that it cooks evenly. Don't let it get scorched!
